Amazing Tomato-Pepper-Basil-Parmesan-Garlic Bruschetta

I burned my finger making this tonight, but it was SO worth it.


  • 1/2 coeur de boeuf tomato
  • 1/3 red bell pepper
  • 10-15 cloves roasted garlic
  • fresh basil
  • olive oil
  • french bread loaf
  •  sun-dried tomatoes (optional)

Prep time: 10 minutes.  Cook time: 10 minutes.

Slice bread into as many slices as you like, I made about 12 with the ingredients I used. Chop tomato, red bell pepper, garlic, sun dried tomatoes, and basil into the size you prefer.

Place bread slices in baking pan (set oven to ‘broil’); top bread slices with parmesan, garlic, basil, pepper, tomato, and more parmesan. Drizzle lightly with olive oil and top off with fresh cracked pepper and salt. Put in oven and broil for about 10 minutes (watch it!), or until exposed bread is lightly browned.


Eat the Bruschetta



Enjoy! Goes very well with asparagus… and German Riesling.  :)    I made enough to eat for lunch tomorrow, but they didn’t last that long.
